Characteristics
Obtained from grape must and concentrated with direct steam. Cooked must (SABA / SAPA) is a grape syrup, with an intense dark color and caramel smell. Thanks to our production technique we guarantee a low SO2, iron and ochratoxinscontent.
Cooked must is used in the production of balsamic vinegar, glazes and condiments.
